SEAFOOD KABSA: A SYMPHONY OF FLAVOURS

Seafood Kabsa is a tantalizing twist on the classic Kabsa dish, a beloved staple in Middle Eastern cuisine. Ingredients :-

  •  2 cups basmati rice
  •  2 tbsp vegetable oil
  •  2 tsp salt
  •  4 tbsp vegetable oil
  •  1 large onion, sliced
  •  2 cloves garlic, crushed
  •  1 tsp fresh ginger, chopped
  •  1 small hot green pepper, minced (optional)
  •  1 lb medium-sized shrimp, peeled and cleaned
  •  1 capsicum, sliced
  •  1 large tomato, chopped
  •  1 tbsp tomato paste
  •  1/2 tsp each: salt, curry powder, ground cardamom, black pepper, cumin, turmeric
  •  3 tbsp water
  •  1 tbsp minced parsley (for garnish)

 

Instructions :-

  1.  Rinse and soak basmati rice for 15 minutes, then drain.
  2.  Cook rice in salted water for 8 minutes; drain and set aside.
  3.  Sauté onion, garlic, ginger, and pepper in oil until golden.
  4.  Add shrimp and cook until pink.
  5.  Stir in capsicum, tomato, tomato paste, and spices.
  6.  Add cooked rice and simmer for 25 minutes with turmeric water.

Serve hot, garnished with parsley. Bon Appetit!
