Mr. Andriano Cayama, our young chef of the month shares the secret to his mouthwatering creation: a delicious lamb dish served with fried rice and roasted buttered corn. The high quality lamb from Greenfield  is cooked to perfection, resulting in a tender, juicy and flavorful centerpiece.Complementing the lamb is a bed of fluffy fried rice, infused with fragrant spices and dotted with crisp vegetables, raisins and toasted nuts. The roasted buttered corn provides a sweet and creamy contrast, its caramelized edges adding a delightful crunch to each bite.

Here is how you can also make this delicious dish at home:


  • 2 tbsp Tomato paste
  • 2 tbsp Brown sugar
  • 2 tbsp Honey
  • 2 tbsp Oyster sauce
  • 2 tbsp Soy sauce

Roasted Corn:

  • 2 Corn on the cob
  • 2 tbsp Butter
  • 1 sprig of  Thyme
  •  Aluminium foil

Lamb Dish:

  • T-Bone Lamb
  • Marinade
  • A sprig of fresh Thyme

Fried Rice:

  • Cooked Rice
  • Mixed Vegetables (of your choice)
  • Raisins
  • Onions
  • Toasted Nuts



  1. In a bowl, mix together the tomato paste, brown sugar, honey, oyster sauce, and soy sauce until well combined.

Roasted Corn:

  1. Preheat the oven to 200°C.
  2. Place the corn on the cob, butter, and thyme in a piece of tin foil. Seal the foil to create a packet.
  3. Bake the corn packet in the preheated oven for 30 minutes.
  4. Once cooked, remove the corn from the oven and drizzle the marinade over the top.
  5. Grill the corn until the edges are lightly charred.

Lamb Dish:

  1. Generously apply the marinade to the T-Bone lamb, making sure to coat all sides.
  2. Cover the lamb with plastic wrap and let it marinate for at least 10 minutes.
  3. Grill the lamb to your desired doneness.

Fried Rice:

  1. In a hot pan, add a drizzle of oil.
  2. Sauté the onions and mixed vegetables until softened.
  3. Add the raisins and toasted nuts, and continue stir-frying.
  4. Pour in the cooked rice and toss all the ingredients together.
  5. Season with salt and pepper to taste.


  1. On a plate, arrange the grilled lamb, the fried rice, and the roasted corn.
