INGREDIENTS

  • 1 4-pound whole roasting chicken
  • salt and freshly ground black pepper, to taste
  • 4 tablespoons unsalted butter, at room temperature
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons chopped fresh thyme leaves
  • 2 tablespoons chopped fresh parsley leaves
  • 3 cloves garlic, minced
  • Zest of 1 lemon

DIRECTION

  • Preheat oven to 435 degrees F.
  • Remove the chicken’s cavity’s giblets and extra fat. Utilizing paper towels, thoroughly dry the chicken. Add salt and pepper to taste and season the cavity of the chicken.
  • Tie the drumsticks together with kitchen twine and lay the chicken on a rack in a shallow roasting pan with the breast side facing up.
  • Butter, rosemary, thyme, parsley, garlic, and lemon zest are combined in a small bowl. Salt and pepper are added to taste.
  • Spread half of the butter mixture under the skin after using your fingers to slowly separate the skin from the breast flesh. Using wooden picks, hold the skin over the butter in place. Sprinkle the chicken with salt and pepper according to taste and the remaining half of the butter mixture.
  • Place in oven and roast for approximately an hour, or until the internal temperature of the chicken reaches 165 degrees F and is golden brown. 15 to 20 minutes should be given for relaxation.
  • Serve immediately.
